There’s nothing that says Christmas quite like freshly baked scones, especially if it involves an extra tasty seasonally special recipe! So, we’ve teamed up with one of the best in the business to bring a little extra culinary cheer to the hospice this winter. 

 Working with Great British Bake-Off star Laura Adlington, our catering staff has recreated a recipe for mouth-watering Christmas scones, which will be sold in our hospice at Coldharbour Road’s Cafe Verde. The café is open to ellenor staff, patients and visiting families. With the days getting colder, our delicious Christmas treat is guaranteed to add a little festive cheer!

Perfectly baked scones - of the fruity variety, served warm and then to be filled with lashings of clotted cream and a dollop of the most delicious strawberry jam.  Add a lovely cup of English Tea, there’s hot chocolate on offer too!

Simply delicious.

ellenor's Festive Scones

For this recipe, you will need...

 

  • 250g self raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp mixed spice
  • 55g butter
  • 25g caster sugar
  • 75g mixture of dried cranberries and dried fruit
  • 150ml milk
  • 1 zest of an orange

Method

 

1. Preheat the oven to 180°c.

2. Rub the butter into the flour, baking powder and cinnamon until you have breadcrumb consistency.

3. Add the sugar, dried fruit, and orange zest. Mix all ingredients together. 

4. Add the milk, a little at a time, until you have a soft dough.

5. Roll out on a floured work surface to approximately 2" thick. Use a cutter to cut out 6 scones. Brush with a little milk and bake in the hot oven for 10 - 12 minutes.
